One of our family traditions is to collect recipes as we travel so that when my family returns home, we can incorporate the things we find along our journeys. You may be surprised that chefs are often flattered to give you the recipe.\u00a0 All you have to do is ask!<\/p>\n<p>On a recent <a href=\"https:\/\/www.cheapoair.com\/flights\/cheap-flights-to-new-york-city-nyc-new-york\" target=\"_blank\" rel=\"noopener\"><strong>trip to New York<\/strong><\/a>, I dined with friends at the Ritz-Carlton, Central Park\u2019s BLT Market.\u00a0 I was blown away by the special fall menu and thought I would share some of Chef Ed Cotton\u2019s \u201csecret recipes\u201d to add to your Thanksgiving tables.\u00a0 Bon app\u00e9tit!<\/p>\n<p><strong>Chestnut-Sausage Stuffing<\/strong><\/p>\n<p>1 tablespoon extra virgin olive oil<br \/>\n1 pound pork sausage, casings removed<br \/>\n1 stick (4 ounces) unsalted butter<br \/>\n1 large onion, diced<br \/>\n2 stalks celery, diced<br \/>\n4 -1\/2 cups country-style bread, crusts removed, cut into 3\/4-inch cubes<br \/>\n2 tablespoons roughly chopped thyme leaves,<br \/>\n2 tablespoons roughly chopped marjoram leaves<br \/>\n2 tablespoons roughly chopped fresh sage leaves<br \/>\n1 tablespoon roughly chopped rosemary leaves<br \/>\n9 ounces roasted chestnuts, peeled and sliced<br \/>\n2 eggs, beaten<br \/>\n\u00bd cup chicken stock<\/p>\n<p><strong>Method<\/strong>:<\/p>\n<p>While the turkey is roasting, heat a large saut\u00e9 pan over medium heat.\u00a0 Add the oil and saut\u00e9 the sausage meat breaking it up with a fork, for 8 to 10 minutes or until cooked through.\u00a0 In a large skillet, heat the butter over medium heat until foaming. Add the onions and celery.<\/p>\n<p>Cover and cook until soft, but not browned, about 12 to 15 minutes.\u00a0 In a large bowl, mix the cooked vegetables, bread cubes, herbs, chestnuts, and eggs. Warm the chicken stock and pour into the stuffing. With a slotted spoon, transfer the sausage to the bowl with the stuffing and mix well. Season to taste.<\/p>\n<p>Transfer stuffing to a buttered 11-x 8-inch ovenproof baking dish. Cover with foil and bake for 30 minutes. Remove the foil. Turn on the broiler and slide the dish under the broiler for 1 to 2 minutes or until the top is browned.<\/p>\n<p>Here is another must-have recipe to add to your holiday buffet.\u00a0 This one was given to me by <a href=\"https:\/\/www.cheapoair.com\/flights\/cheap-flights-to-boston-bos-massachusetts\" target=\"_blank\" rel=\"noopener\"><strong>Boston<\/strong><\/a> Pastry Chef Sterling Jackson-Brown from The Ritz-Carlton, Boston Common.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Delectable Maple Bread Pudding<\/strong><\/p>\n<p>2 Cups Whole Milk<br \/>\n8 Whole Eggs<br \/>\n2 Cups Heavy Cream<br \/>\n\u00bd Cup Sugar<br \/>\n\u00be Cup Pure Maple Syrup<br \/>\n1 Teaspoon Maple Extract<br \/>\n1 Vanilla Bean Split and Scraped<br \/>\n1 Teaspoon Freshly Grated Cinnamon<br \/>\n\u00bd Teaspoon Freshly Grated Nutmeg<br \/>\n6 Cups Torn Stale Croissants or Bread (crust removed from Bread)<\/p>\n<p><strong>Method<\/strong>:<\/p>\n<p>Place the stale croissants or bread in desired baking dish, spreading the bread evenly throughout. In a stainless steel pot, bring the milk, cream, vanilla bean, maple extract, cinnamon and nutmeg to a slight simmer. Meanwhile, combine the eggs, sugar, and maple syrup in a bowl and whisk to combine, not incorporating too much air.<\/p>\n<p>When the milk mixture has come to a simmer, gently pour 1\/3 of the amount over the eggs while whisking.\u00a0 When the first addition is completely incorporated, continue to add the hot milk mixture while stirring gently.\u00a0 Strain this mixture over the croissants or bread and chill overnight, to allow the custard to soak into the bread.<\/p>\n<p>Preheat your oven to 350 degrees.
